This was one of the first meals I made in my Instant Pot. My wife likes white chicken meat, and I prefer dark. Using the whole chicken is a great compromise. If you have a sick friend, make up a batch of this and take half of it to them. They’ll never know you selfishly kept half for yourself.
Lasagna has long been one of my favorite meals. I always picture myself as a human version of Garfield the cat when we have it for a meal. Sometimes there are leftovers, but they seldom make it through the night, and never through the next day.
I learned a nice little trick for deviled eggs this past week. I always joke around that there are never leftover deviled eggs at family events, church gatherings, etc.. As a social experiment, I frequently volunteer to make them, and then go “overboard” to see if we can make enough so that there are actually leftovers. My prior record was 4 dozen at a family event. That’s 96 halves. They were all gone.
First of all, my apologies to any of you that stumbled on to this by mistake. Even though I work (and have lots of friends) in the Information Technology field, “IP” in this case is not “Internet Protocol”, but “Instant Pot”. Sorry, this is a cooking story.
After having the Instant Pot for a few days, I decided I’d try my hand at coming up with something on my own. I like chicken, and it’s a natural for the IP. The 2 attempts we’ve made with rice in the menu ended up with the rice a bit “mushy” for my taste, so I decided that chicken and rice would be a good choice to experiment and see if I can get the “rice added to food” process right.
I wish I could say I purchased our Instant Pot carefully after doing tons of research and making a highly informed decision; but I didn’t. It was already January 4th (2018), our anniversary was coming up in just over a week, and I didn’t have a thought yet as to what I was going to get Gini.
